These Red Velvet Cookies are made with a box cake mix.

Yes, box cake mix.

Very simple and easy and not cake like as how you would think. It is delicious.

They are perfect for Valentine’s Day, which is few weeks away.

I added some White Chocolate chips to the dough at the end before chilling it, but you can do it without them and they will still be awesome.

Red Velvet Cookies are not just for Valentine’s Day, but also for the Christmas Season.

They are great for cookie exchange at work or gifts to your neighbor, friends or family members.

How to make Red Velvet Cookies?

This Cookie recipe only takes 4 ingredients to make them.

They are easy because again we are using a box cake mix which makes cleaning up very quick.

Firstly, mix all the ingredients except for the white chocolate chips in a mixing bowl, until fully combined.

Secondly, fold in the white chocolate chips and cover with a plastic wrap. Allow to chill in the freezer for about 30 to 40 minutes.

Thirdly, scoop about 2 Tablespoon of cookie dough and form a ball in between the palm of your hands. Place on the prepared baking sheet, 2 inches apart.

Optional: you can add a few of the white chocolate chips on the top of each cookie balls (about 3 to 5 chips).

Finally, bake at 350 degrees Fahrenheit for about 10 to 13 minutes. Cool and enjoy.

Can I Freeze the Red Velvet raw Cookie Dough?

Yes you can absolutely freeze the raw cookie dough in the freezer for up to 3 months.

In order to do so, prepare the recipe as directed and then form the cookie balls.

Place them on a cookie sheet and put them in the freezer for about an hour.

Once the cookie dough balls are frozen, place then in a freezer safe plastic bag.

This helps the cookie balls not to freeze together as one big ball, but as an individual cookie ball.

When you are ready to bake them, allow the cookie dough balls to thaw on a lined baking sheet for an hour then bake.

How to store these Red Velvet Cake Mix Cookies?

Store these Red Velvet Cookies in an air tight container for about 5 to 7 days.

You can leave them out on the counter top in the container.

Ingredients

  • 1 (15.25 oz) Red Velvet Cake Box Mix
  • 2 Eggs
  • 1/2 cup Vegetable Oil
  • 1 cup of White Chocolate Chips

Instructions

  1. Add the cake box mix, two eggs and vegetable oil in a large mixing bowl and mix well, until combined. Fold in the white chocolate chips.
  2. Cover the mixing bowl with plastic wrap and let it chill in the freezer for about 30 to 40 minutes.
  3. Preheat oven to 350 degrees Fahrenheit.
  4. Line 2 baking sheets with parchment paper and set aside.
  5. Separate the dough into small pieces by using a 2 Tablespoon size cookie scoop. Form a ball by rolling it between the palm of your hands.
  6. Place each ball on the prepared baking sheets, 2 inches apart.
  7. Bake for 10 to 13 minutes or until the top of the cookies are set but soft in the center and slightly crisped around the edges.
  8. Remove from oven and allow to cool for about 5 minutes before transferring to a wire rack to finish cooling.
  9. Repeat the process for the remainder of the cookie dough.

Notes:

  1. Allow the cookie dough to chill in the freezer for about 30 to 40 minutes. This harden the cookie dough so that it can roll in a ball and make it much better to handle.
  2. Optional: You can add only 3/4 cup of the white chocolate chips to the dough. The remaining 1/4 cup you can add some on the top of each balls. You can add about 3 to 5 chips per cookie ball.
