This blueberry quick bread need no mixer because melted butter was used instead of creaming butter and sugar together.

Yes, you can use frozen blueberries for this quick bread recipe if you are not able to get your hands on some fresh blueberries from the supermarket.

Allow the frozen blueberries to thaw overnight and then drain the excess liquid.

Gently toss the blueberries with 2 teaspoons of the flour mixture to prevent the blueberries from sinking to the bottom while baking and add to the batter.

Another option is to add the frozen blueberries to a colander and rinse with cold water, until the liquid looks lighter as it drains.

Place the blueberries on some paper towels and dry them really good.

Then gently toss them with 2 teaspoons of flour mixture to prevent them from sinking while baking and add the batter.

How to store Blueberry Bread?

Allow the Blueberry Bread to completely cool first. Then store it in an airtight container and leave it on the counter top for about 2 to 3 days.

Also, tightly wrap it with plastic wrap or aluminum foil paper and place it in the refrigerator for up to 7 days.

Can I freeze this Blueberry Bread?

Absolutely! Once it is cooled completely, slice the bread and wrap each individual slices or as a whole loaf with plastic wrap or parchment paper.

Place the slices or loaf in a freezer friendly bag and freeze for up to 3 months.

To defrost, leave on the counter top for it to come to room temperature. Then reheat in the oven or microwave if so desired.

Firstly, sift and whisk together all the dry ingredients. Add two teaspoons of the dry ingredients to the blueberries and set aside.

Ingredients

  • 1 3/4 All Purpose Flour
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground Nutmeg
  • 3/4 cup Granulated Sugar
  • 1/2 cup Unsalted Butter, melted
  • 2 large Eggs
  • 1 1/2 teaspoon Vanilla Extract
  • 2 cups fresh Blueberries

Instructions

  1. Preheat oven to 350 degrees F. Grease a loaf pan with butter and dust lightly with some flour or coat with non stick baking spray.
  2. In a large bowl, sift and whisk together the dry ingredients: all purpose flour, baking powder, baking soda, salt and ground nutmeg. Add 2 teaspoon of the flour mixture to the blueberries and toss.
  3. In a separate large bowl, whisk together the sugar, melted butter, eggs and vanilla extract.
  4. Pour the wet ingredients to the dry ingredients and mix together with a spatula, until fully combined.
  5. Add the blueberries to the batter and fold them in.
  6. Pour batter into the prepared loaf pan.
  7. Bake for 60 to 70 minutes or until a wooden toothpick is inserted into the center and it comes out clean. Please keep in mind that every oven is different, so baking time varies.
  8. Remove from the oven after baking and let it stand for about 15 minutes, before taking it out of the loaf pan.
  9. Once it is cool to your desire, slice and enjoy.
