Guinness Beef Stew is a rich, wonderful and hearty meal recipe with tender beef, potatoes and carrots slowly cooked in a stout beer in a Slow Cooker.
It is a traditional Irish dish that is perfect for St. Patrick’s Day, but it can be a wonderful beef stew on a winter day.
At first I was a little skeptical about this Beef and Guinness Stew Recipe because I know that Guinness has a bitter flavor.
However, to my surprise this Guinness Beef Stew was not that bitter.
With all the flavors, herbs and spices, the bitterness was not that obvious.
Yes you can taste the Guinness flavor, but it is not over powering to where you aren’t enjoying the stew.
Overall, if you do not like Guinness because of the bitterness, then you will not like this beef stew all together.
But if you aren’t too picky and want to try something new (that’s if you never had it before), then go ahead and give this Guinness Beef Stew a try.
This Slow Cooker Guinness Beef Stew recipe is easy to make, once you have browned all the pieces of the beef, then the slow cooker will do the rest.
It allows you to do your chores while it slowly cooks.
Can I cook the Guinness Beef Stew on the stove top instead?
Yes you can cook this Irish Beef Stew with Guinness Stout on the stove top instead of the slow cooker.
It will take about 3 to 4 hours to cook.
Reduce the flour that is used to thicken the stew, since most of the liquid will evaporate as it cooks and leaves a thicker gravy like liquid.
Unlike the slow cooker, the liquid doesn’t evaporate so easily, so flour is used to help thicken it.
How to make Guinness Beef Stew
First thing is to clean the beef by cutting it into bite size pieces, cutting off any extra fat, washing it off with a vinegar water mixture and then rinsing it off twice.
Pat dry all the pieces and then season it.
Allow it to marinate preferably overnight or at least for 2 hours.
Secondly, brown all pieces of the beef, transfer to a bowl and set aside for later. In the same skillet, add the garlic, onions, bell peppers, green onions and tomatoes and saute for a few minutes.
Thirdly, in the slow cooker add the potatoes, carrots and celery stalks (if you are not using celery seed).
Pour the sautéed vegetables on top and then the browned pieces of beef.
Add the beef broth, guinness, brown sugar, ketchup, thyme, rosemary, celery seeds (if you didn’t use celery stalks) and allspice.
Stir to combine and cover. Cook on low for 7 hours.
Finally, after the 7 hours of cooking, mix the 1/4 cup of flour with some of the liquid from the beef stew.
Pour it back into the slow cooker and stir.
Optional: Open a can of butter beans and drain off the water and rinse with water and drain again.
Add the butter beans and let it cook for another hour.
Add salt and pepper to your desire.
Serve warm and enjoy.
Guinness Beef Stew Recipe
Ingredients
- 2 1/2 pounds Beef Stew Meat, cut into 1 to 2 inches pieces
- 2 teaspoon Complete Seasoning or All Purpose Seasoning
- 1 Tablespoon Soya Sauce
- 2 Tablespoon unsalted Butter
- 3 cloves Garlic, minced
- 1 large Onion, chopped
- 2 Celery Stalks, chopped or 1/4 teaspoon Celery Seeds
- 1 Roma Tomato
- 1/2 green Bell Pepper
- 3 stalks Green Onion (Scallions), diced
- 3 large Carrots, peeled and cut into 1 inch chunks
- 4 large Potatoes, peeled and cut into chunks
- 1 teaspoon dried Rosemary
- 1 teaspoon dried Thyme or 2 sprigs fresh Thyme
- 2 Tablespoon Brown Sugar
- 2 Tablespoon Ketchup
- 1/4 teaspoon Allspice
- 1 bottle (11.2 oz) Guinness Extra Stout
- 3 cups Beef Broth
- 1/4 cup All Purpose Flour
- 1/3 cup White Vinegar, for washing beef
- 1 can of Grace Butter Bean (optional)
Instructions
- Discard any fatty pieces from the beef. Pour a 1/3 cup of white vinegar with some water and to rinse the beef meat. Discard vinegar water and rinse again twice. Pat dry each piece. Season with the complete seasoning. Cover and let it marinade for about 2 hours or preferably overnight.
- In a large skillet, heat the butter over medium heat. Add pieces of the beef (do not overcrowd the skillet but work in batches) to brown on each sides for about 8 minutes. Transfer the browned beef pieces into a bowl and set aside for later.
- Add the minced garlic, bell pepper, green onions, onions and tomatoes in the same skillet and saute just for a minute or two.
- In the slow cooker, add the potatoes, celery stalks and carrots.
- Pour the sauteed vegetables on top of the celery stalks, potatoes and carrots with the browned beef pieces also.
- Add the brown sugar, ketchup, rosemary, thyme, allspice, celery seeds (if you didn’t use the celery stalks) beef broth and guinness to the slow cooker. Stir to combine.
- Cover and let it cook for 7 hours on low.
- In a medium bowl, mix some of the liquid from the stew with the 1/4 cup flour (about 2 cups, just enough to make a thick liquid). Add it to the slow cooker.
- Optional: If you are going to to add the butter beans, drain the water from the can, rinse with some water and drain again. Add the butter beans and cook for an additional hour or until thickened.
- Add salt and pepper to taste. Serve and enjoy.
Notes
- If you are going to add the Butter Beans, add them right after the flour mixture (to thicken the sauce) is added.
- Also, allow to marinate overnight if you can, if not for at least 2 hours.
