  • 1 cup grated Carrots
  • 1/3 cup Canola or Vegetable Oil
  • 1/2 cup Brown Sugar
  • 1/4 cup Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Sour Cream or Greek Yogurt
  • 1/2 teaspoon Salt
  • 2 cups All Purpose Flour
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Nutmeg

Instructions

  1. Preheat oven to 350 degrees. Greased a 9 x 5 loaf pan with butter and dust it with some flour (lightly) or with non-stick cooking spray.
  2. In a medium bowl, sift the flour, salt, baking powder, baking soda, nutmeg and cinnamon. Whisk together and set aside for later.
  3. Mix the brown sugar, granulated sugar and oil together. Then add the mashed bananas, eggs, sour cream or greek yogurt and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix. Then gently fold in the grated carrots in to the mixture.
  5. Pour mixture in the greased loaf pan.
  6. Bake for 55 to 60 minutes or until a toothpick is inserted into the center and it comes out clean.
