If you are a lover of coconut, then these Jeweled Coconut Drops are truly the perfect cookie you want on your dessert table.

They are beautiful, tender, delicious with the right amount of sweets.

As much as it is rolled into sweetened shredded coconuts, I thought it would be a little too sweet.

But it was just the right amount of sweets for a cookie.

The combination of the orange juice and almond extract, gives it an unbelievable flavor.

Overall, these Jeweled Coconut Drops are simple and incredibly delicious.

How to make Jeweled Coconut Drops

Once the dough is mixed together, placed in the refrigerator and cookies are formed, you can have these Jeweled Coconut Drops ready in the next 20 minutes. It is very easy to make.

Firstly, whisk together the dry ingredients: flour, salt and baking powder. Set aside.

Secondly, cream the butter, cream cheese and sugar together. Then add the egg yolk, almond extract and orange juice and mix well.

Thirdly, slowly add the dry ingredients to the creamed butter. Add the 3 cups of shredded coconuts and mix together. Refrigerate for a minimum of 30 minutes.

Fourthly, form a ball shape with about 1 Tablespoon of the mixture and roll into the remaining shredded coconut. Use the end of a wooden spoon handle to make indentations in each balls and bake at 350 degrees Fahrenheit for about 10 to 15 minutes.

Finally, fill each cookie with the strawberry preserves and allow to cool. Enjoy.

Substitute for Strawberry Preserves

If you are not able to get your hands on some Strawberry Preserves, then some Raspberry Preserves can be used as a substitute.

Another substitute is some Nutella, if you are a lover of chocolate.

Even some Pineapple Preserves would be delicious too… I love a pineapple and coconut combination.

Just be creative and make it your own.

Ingredients

  • 3 oz Cream Cheese
  • 1/3 cup Butter, room temperature
  • 3/4 cup Granulated Sugar
  • 1 large Egg Yolk
  • 1 teaspoon Almond Extract
  • 2 teaspoon Orange Juice
  • 1 1/4 cups All Purpose Flour, sifted
  • 1 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 4 cups Sweetened Shredded Coconut
  • 1 cup Seedless Strawberry Preserves

Instructions

  1. Whisk together in a bowl, the flour, baking powder and salt, until evenly incorporated. Set aside.
  2. In another large bowl, cream the cream cheese, butter and sugar, until it is light and fluffy. Add the egg yolk, orange juice and almond extract and mix together.
  3. Slowly add the flour mixture to the creamed mixture and mix well.
  4. Add 3 cups of the shredded coconut and stir.
  5. Cover the mixture with plastic wrap and place in the refrigerator for a minimum of 30 minutes.
  6. Preheat oven to 350 degrees Fahrenheit and line your baking sheet.
  7. Remove the mixture from the refrigerator and form a ball shape with about a Tablespoon of mixture. Roll each ball shape in the remaining 1 cup of shredded coconut. Place each ball, (about 2 inches apart) on the ungreased prepared baking sheet. Press in the center of each ball to make a deep indentation with the end of a wooden spoon handle.
  8. Bake for about 10 to 15 minutes or until edges are light brown.
  9. Once removed from the oven, use the end of a wooden spoon handle to enlarge the indentations, if they are closed or narrowed.
  10. Transfer each cookies from baking sheet to wire racks. Fill each cookies with strawberry preserves. Cool completely and enjoy.
