How to make Jeweled Coconut Drops
Once the dough is mixed together, placed in the refrigerator and cookies are formed, you can have these Jeweled Coconut Drops ready in the next 20 minutes. It is very easy to make.
Firstly, whisk together the dry ingredients: flour, salt and baking powder. Set aside.
Secondly, cream the butter, cream cheese and sugar together. Then add the egg yolk, almond extract and orange juice and mix well.
Thirdly, slowly add the dry ingredients to the creamed butter. Add the 3 cups of shredded coconuts and mix together. Refrigerate for a minimum of 30 minutes.
Fourthly, form a ball shape with about 1 Tablespoon of the mixture and roll into the remaining shredded coconut. Use the end of a wooden spoon handle to make indentations in each balls and bake at 350 degrees Fahrenheit for about 10 to 15 minutes.

Instructions
- Whisk together in a bowl, the flour, baking powder and salt, until evenly incorporated. Set aside.
- In another large bowl, cream the cream cheese, butter and sugar, until it is light and fluffy. Add the egg yolk, orange juice and almond extract and mix together.
- Slowly add the flour mixture to the creamed mixture and mix well.
- Add 3 cups of the shredded coconut and stir.
- Cover the mixture with plastic wrap and place in the refrigerator for a minimum of 30 minutes.
- Preheat oven to 350 degrees Fahrenheit and line your baking sheet.
- Remove the mixture from the refrigerator and form a ball shape with about a Tablespoon of mixture. Roll each ball shape in the remaining 1 cup of shredded coconut.
