It is perfect for a party, like a Super Bowl Party, a midday snack or just for dinner.

Yes, dinner. I love making these plantain cups for dinner as an easy meal.

The kids loves them because of the cuteness and it’s grab and go.

These are great to make when you have some leftovers in the refrigerator that can be used as filling.

Just fry the plantains and stuff them with your filling.

Green or Yellow Plantains

The type of plantain you used to make these appetizers cups is all up to your preference.

However, the green plantains are the best to use to make the Plantain Cups Appetizer.

It’s just much better.

If you prefer a little sweetness in the stuffed plantain cups, then you can use the yellow plantains that are still firm.

Whenever a plantain is turning yellow, it means it is getting ripe.

So again, avoid the plantains with black spots on them.

Those are too ripe and will not be crispy when fried, but will be very soft.

How to shape the Plantain Cups

To shape the plantain cups appetizers you can use two different methods.

The first method is to use a tostonera.

This looks like a lemon squeezer.

I don’t own a tostonera so I tried the lemon squeezer.

The problem is that when you press to form the cup with the lemon squeezer, the plantain squeeze through the holes.

If you are comfortable using it, then go ahead and use one.

The second method is to use a muffin pan.

This is the method I used to make this recipe.

Place piece of the cooked plantain in one of the muffin cup.

Then use a bottle or a small glass (I used a shot glass) and press the plantain to form the cup shape.

Another way is to use another muffin pan.

Use the bottom of the other muffin and press into the plantain that’s in the other muffin pan.

Can I make the Plantain Cups ahead of time?

No, I wouldn’t suggest making the plantain cups ahead of time.

These appetizer cups are much better when they are done right before you serve them.

However, the filling can be done ahead of time depending on what your filling will be.

Favorite Filling

These Plantain Cups Appetizers taste very delicious with any filling you choose.

For this recipe, I used some Ackee and Saltfish for my filling.

Below are some suggested filling you can choose or your favorite.

How to make Plantain Cups Appetizers

Firstly, peel both plantains and wash. Drain them on paper towel. Cut each plantain into 4 pieces.

Secondly, add them to a bowl. Pour the white vinegar and sprinkle the salt over them. Then pour the hot water over the plantains and stir a little, ensuring the water covers the plantains. Let it soak for atleast 30 minutes.

Thirdly, remove the plantains from the water mixture and place them on paper towel. Heat oil in a large skillet and add the plantain pieces into the hot oil. Fry for about 7 to 10 minutes or until lightly brown.

Fourthly, remove the plantains and form each piece into cup shape. Place each plantain cup back into the hot oil and fry again until golden brown.

Finally, drain them on paper towel and fill them with your favorite filling. I used some Ackee & Saltfish. Enjoy.

Ingredients

  • 2 green plantains, peeled and washed
  • 1 cup hot water
  • 1 Tablespoon Salt
  • 2 Tablespoon White Vinegar

Instructions

  1. Peel the two green plantains and wash them off. Drain them on a paper towel.
  2. Cut each plantain into 4 pieces (depending on the size you want each cup to be) and add them to a medium bowl.
  3. Pour the white vinegar over the plantains.
  4. Sprinkle the salt over the plantains.
  5. Pour the cup of hot water over the plantains, making sure the water is covering the plantains.
  6. Allow the plantain pieces to soak into the water mixture for atleast 30 minutes.
  7. After the 30 minutes, remove the plantain pieces and dry them on paper towel.
  8. Heat the oil in a large skillet.
  9. Place the plantain pieces in the hot oil and fry them about 7 to 10 minutes or until lightly brown.
  10. Remove them from the oil and place each pieces in a muffin pan or a lemon squeezer or a Tostonera. I used a muffin pan.
  11. With a small cup (I used a shot glass), press to shape into a cup.
  12. Add each plantain cup back into the hot oil to fry again, until golden brown.
  13. Place them on a plate with napkins to drain off the excess grease.
  14. Add your favorite filling to plantain cups while they are still warm and serve immediately.
  15. Enjoy.

Notes

  1. It’s best to use green plantain to make this recipe.
  2. Avoid the ripe plantains because those will be too soft.
  3. Ensure that the hot water mixture is covering the plantains when soaking them.
