This Red White and Blue Poke Cake is so easy and fun to make and perfect for Memorial Day, Independence Day and Veterans Day holiday.

Whatever the celebration is, this Jello-O Poke cake will be the perfect dessert on your menu that day.

A Poke cake is one of the easiest cake to make.

It is made with a white cake mix and Jell-O.

The Jell-O adds some colors to a plain white sheet cake.

Tops off with some whipped topping or even a cream cheese topping (like what I did for this recipe) and some fruits.

Whenever the holidays comes around, I have always seen these vibrant poke cakes posted on my social media timeline.

So I said why not give it a try for this past 4th of July holiday.

I was so shock how easy it was and fun to make with the kids.

Yes invite the kids to have some fun with you in the kitchen.

Plus, the cream cheese topping with the fruits on top was delicious.

I think that was one of the best part of it besides the beautiful red and blue jello colors embedded among the white cake.

It was a big hit for this year celebration.

If you are not a big fan of the cream cheese topping, then just use the whipped topping with the fruits.

However, if you don’t want fruits on top, then some red, white and blue jimmies edible sprinkles can also give you that patriotic look too.

Also, I didn’t use up all the Jell-O mixtures.

So I put the remainder in the refrigerator for the kids to eat later on.

Yep, another dessert for the kids.

How to make the Red White and Blue Poke Cake?

Firstly, bake a 9 x 13 cake as directed on the white cake mix. Allow to cool.

Secondly, use the end of a wooden spoon or chopstick to poke holes in the cake.

Thirdly, prepare both the red and blue jell-o mix and then fill each hole with the colors.

Finally, mix together the cream cheese, powdered sugar, milk and whipped topping. Spread evenly on top of the cake and then finish it off with some fruits.

Red White and Blue Poke Cake Recipe

Ingredients

  • 1 (15.25 ounce) White Cake Mix, prepared as directed on the package.
  • 2 cups boiling Water, for gelatin
  • 1 (3 ounce) Jell-O Berry Blue Gelatin
  • 1 (3 ounce) Jello-O Strawberry Gelatin
  • 2 (8 ounce) Cream Cheese
  • 1/2 cup Powdered Sugar
  • 2 Tablespoon Milk
  • 1 (8 ounce) Whipped Topping
  • 1 quart Strawberries, washed
  • A pint of Blueberries (approximately 35), washed

Instructions

  1. Prepare and bake a white cake mix in a 13 x 9 inch baking pan as directed on the package. Remove it from the oven and allow to cool.
  2. Once it is cooled, use the end of a wooden spoon or a chopstick to poke holes (in rows) in the cake.
  3. In two small bowl, add the strawberry (red) and berry blue gelatin in each bowl. Pour 1 cup of boiling water in each and mix, until dissolved. Pour each color in the holes with a teaspoon measuring spoon, until they are filled. Another way to fill each hole is to use a squeeze bottle. You can choose to do it alternative, one row with strawberry (red) and the other with berry blue.
  4. Then in a medium bowl, mix together the cream cheese, powdered sugar and milk. Fold in the whipped topping. Spread the cream cheese mixture on top.
  5. To the top left corner of the cake, place about 5 rows of 7 blueberries. Then hull and slice the strawberries and add them in a rows, overlapping each other.
  6. Allow to chill in the refrigerator for about 4 hours or preferably overnight.
