These Breakfast Muffins are so scrumptious, tasty, delicious and perfect for those days when you need to whip up something easy in the kitchen for breakfast.

This recipe contain eggs, cheese, sausages, scallions, seasoning and some flour that make them so delicious.

With just every bite you will be finding yourself eating more than you intended to eat.

Pretty much, I did warn you.

Once these are finish baking these breakfast muffins and put them on the counter to cool, there will be someone trying to get one out of the pan… before it is even cooled.

These muffins are perfect for Thanksgiving or Christmas mornings.

Just when you there are a lot of mouth to feed and you want to look about something fast and quick, so you can focus on your big cooking.

Add-in Options

I am not a person to force my way onto any one. I love to give others options, when it comes to food.

This was just the way how I was brought up.

When my mother didn’t have certain ingredients to make dinner, she would always finds an alternative to make us a meal.

With that been said, you can use ham or even some cooked chicken breast in these Breakfast Muffins.

Also, you can even cooked some breakfast sausages in the oven, drain the oil and add to the mixture.

Please deduct the amount of Salt if using Ham or Breakfast Sausage.

Another option is to omit the flour all together and use more eggs as the base.

Add some cheese, bacon, and some spinach and you will get some yummy muffins.

However, your add ins are your choice.

There is no set rules on what you can or cannot put into it.

It’s all up to you.

Can you freeze these Breakfast Muffins

Even though I prefer to eat them on the day they were baked, I am so happy to say that these Breakfast Muffins are freezer friendly.

You can store them individual in a resealable bag to make it easier for you to put in the microwave and warm up for a few seconds.

How to make Breakfast Muffins

Surprisingly, these Breakfast Muffins are so easy and quick to make. I promise you, you wont be in the kitchen too long.

Firstly, dice up the Hillshire Farm Smoked Turkey Sausage. This will give a little kick of spice and also add some flavor to the muffins.

Mix some flour with baking powder. Then add some seasoning with the scallions and the cheese.

Finally, pour the milk, oil, eggs and mix together and you are all done. Oh wait, not before you scoop the mixture in a muffin pan and then bake them. See how easy that was?

Undeniably, the best Breakfast muffins you will ever taste. Enjoy every bite.

Breakfast Muffins Recipe

Ingredients

  • 2 cups All purpose flour
  • 1 Tbsp Baking powder
  • 1 tsp Salt (less if you are using Ham or Breakfast Sausage)
  • 1/2 tsp Italian Seasoning
  • 1/4 tsp Black Pepper
  • 1 cup Milk
  • 2 Large Eggs
  • 1/4 cup Vegetable Oil
  • 1 cup Cheddar Cheese
  • 2 to 3 stalks of Scallions, diced
  • 1 cup Smoked Turkey Sausage

Instructions

  1. Preheat your oven to 350 degrees.
  2. Spray your muffin pan with non stick cooking spray.
  3. In a bowl, add the flour, salt, italian seasoning, black pepper and baking powder and whisk together.
  4. Then add the milk, eggs and vegetable oil and mix together with a spatula, until all combined.
  5. Add the sausages, scallions and cheese to the mixture. Do not mix too much.
  6. Fill each muffin cups with the mixture. This batter will make 12 muffins.
  7. Bake for 30 minutes or until a toothpick is inserted into the center of one of the muffin and it comes out clean.
  8. Remove from the oven and allow to cool. Remove from the muffin pan and serve warm. Enjoy.

Notes:

  1. Do not over mix the batter.
  2. Instead of the Smoked Turkey Sausage, substitute it with some Ham, Cooked Chicken or some Breakfast Sausage.
  3. If using the Breakfast Sausage, prepare it as per package and then drain the oil before adding it to the batter.
  4. Also, keep in mind that with certain add ins such as the Ham and Breakfast Sausage, you will have to deduct the Salt amount listed.
