Red Velvet Lava Cake is an easy dessert made with simple ingredients to make a moist red velvet cake with a molten lava in the middle that is perfect for Valentine’s Day or for a special occasion.

It’s a wonderful Valentine’s Day dessert for two, but if you have children like me, then they are included too.

These are also great as a single serving when you are feeling for a quick and easy dessert.

Can I prepare the unbaked Molten Lava Cake ahead of time

Yes, you can.

Prepare the batter as instructed below in the mixing bowl.

Cover the batter with plastic wrap and leave in the refrigerator for about 24 hours.

Once you are ready to bake, remove it from the refrigerator and place it on the counter top.

Let it come to room temperature before baking.

Then pour into the prepared ramekins and bake.

To know that your Molten Lava Cake is done, the edges of the cake are baked all around and the center is a little jiggly.

Also, if you insert a toothpick at the side of the lava cake and it comes out clean, then it is done.

The top should be soft, so do not overbake.

Yes, you can freeze this. Let the Molten Lava Cake cool completely.

Then wrap each individual up with plastic wrap and into a freezer friendly container in a single layer.

These Red Velvet Molten Lava Cake are ooey gooey good all by themselves without any extras.

However, you can sprinkle lightly some powder sugar or cocoa powder on the top.

But, if you want to be fancy when you are serving it, add some whip cream, a scoop of ice cream or cream cheese whipped cream on the top.

Firstly, grease the 4 (8oz) ramekins with butter or with non stick baking spray and dust with cocoa powder. Sift and whisk all the dry ingredients.

Secondly, melt the white chocolate and butter in the microwave or over a double boiler.

Thirdly, beat the eggs and egg yolks. Add sugar, the vanilla extract and red food coloring.

Ingredients

  • 4oz White Chocolate
  • 1/2 cup (1 stick) Unsalted Butter
  • 2 large Eggs
  • 2 large Egg Yolks
  • 1/2 cup Sugar
  • 6 Tablespoon All Purpose Flour
  • 2 Tablespoon Unsweetened Cocoa Powder, plus extra for dusting
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Vanilla Extract
  • 2 teaspoon Red Food Coloring

Instructions

  1. Preheat the oven to 450 degrees Fahrenheit. Grease 4 (8 ounce) ramekins with butter or with non stick baking spray and then dust with some unsweetened cocoa powder and then tap out the excess cocoa powder. Place them on a baking sheet. Set aside for later.
  2. In a medium glass bowl, melt the white chocolate and unsalted butter over a double boiler, stir until smooth or in the microwave at 20 seconds intervals.
  3. Sift the flour, cocoa powder and salt in a medium bowl. Set aside.
  4. Beat the two large eggs, two large egg yolks and sugar in a large bowl. A whisk can also be used instead of the a hand mixer. Add the vanilla extract and red food coloring and continue to mix.
  5. Then add the chocolate butter mixture and mix.
  6. Add the flour mixture (dry ingredients) and mix together until fully incorporated.
  7. Pour in the batter evenly into the prepared ramekins on the baking sheet.
  8. Bake for 14 to 15 minutes.
  9. Allow to cool for about 4 to 6 minutes and then invert on a serving plate.
  10. Slightly dust with powder sugar and enjoy. You can add a scoop of ice cream on top to make it even more delicious.

Notes:

  1. Instead of dusting the greased ramekins with some cocoa powder, you can use some granulated sugar or some flour. But keep in mind that the flour will leave some white residue around it after baking.
  2. Use a hand mixer or a whisk to mix the ingredients together.
  3. Add a scoop of ice cream on the top and enjoy.
  4. I used 2 teaspoon of red food coloring, but you can use more or less, it’s up to you.
