It gives you all the Summer feelings, even though we are still in Spring.

I love me some Banana Bread, but with this Strawberry Banana Bread Recipe, it brings my Banana Bread Recipe to a whole new level.

The love I have for Banana Bread is unexplainable.

I have Banana Bread for breakfast, lunch and dessert.

A slice of Banana Bread with a cup of hot chocolate is so divine.

For lunch, I add a slice of cheese on it and just put it in the microwave for about 15 seconds and yes, it is delicious.

As for dessert, a scoop of my favorite ice-cream and a slice of Banana Bread…so yummy.

Okay, I am going to stop now… my mouth is watering.

Summer is right around the corner, so there are a lot of Strawberries at the Farmers Market and even your local Supermarket.

There are so many things you can add Strawberries to such as smoothies, pies, pancakes, juice etc.

But adding some Strawberries to your Banana Bread is one of the best thing you can do.

Fresh Strawberries, instead of frozen Strawberries…

With every slice, you will be tasting some fresh sweet strawberries.

I used fresh strawberries in this recipe.

Both the bananas and strawberries will add a lot of moisture when baking.

So imagine all the moisture frozen strawberries will add to the batter while baking.

If you are using frozen strawberries, all to defrost first.

The strawberries will release a lot of juice, so you can add a tablespoon of flour to toss the strawberries in before adding it to the batter.

Also, with mixing the strawberries with the flour, it prevents the strawberries from sinking to the bottom.

In this recipe, I didn’t add any flour to the strawberries before adding it to the batter.

In my original Banana Bread recipe, I usually use only 1 3/4 cups of flour.

However, in this easy Strawberry Banana Bread recipe, I used 2 cups of flour so the batter is a little bit thicker so when the juice is released from the strawberries, it is not too moist… but just the right amount.

Can I freeze this Strawberry Banana Bread?

Absolutely yes!

Allow the Strawberry Banana Bread to cool first, then tightly wrap as a whole loaf or individual slices with plastic wrap.

Place a freezer friendly bag and place in the freezer for up 3 months.

To defrost, leave on the counter top for it to come to room temperature.

Then reheat in the oven or microwave if so desired.

How to make Strawberry Banana Bread?

You won’t believe how easy this recipe is… just too easy and you will be out of the kitchen in no time.

Once you cream your butter and sugar with some milk and then adding the eggs, vanilla and mashed bananas… you are half way there.

Whisk the dry ingredients and then add the wet ingredients to it.

Gently stir in the sliced strawberries in the batter and then pour it in a greased loaf pan.

Bake for about 60 to 70 minutes and then once cool, you can enjoy a slice of your easy and moist Strawberry Banana Bread.

Strawberry Banana Bread Recipe

Ingredients

  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3 Tablespoon milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh strawberry, sliced
  • 2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg

Instructions

  1. Preheat oven to 350 degrees F. Grease a loaf pan with butter and dust lightly with some flour or coat with baking spray.
  2. In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt and ground nutmeg. Set aside.
  3. In a separate large bowl, beat the sugar, butter and milk with a hand mixer on high speed.
  4. Add the vanilla extract, mashed banana and eggs to the creamed butter.
  5. Pour the wet ingredients to the dry ingredients and mix with a spatula at first. Then use the hand mixer to make sure that all the ingredients are combined together. Doing this method, prevents a lot of flour all over the kitchen.
  6. Add the sliced strawberries to the batter gently.
  7. Pour batter into the prepared loaf pan.
  8. Bake for 60 to 70 minutes or until a knife or toothpick is inserted into the center and it comes out clean.
  9. Remove from the oven after baking and let it stand for about 15 minutes, before taking it out of the loaf pan.
  10. Once it is cool to your desire, slice and enjoy.

  1. Please keep in mind that every oven is different, so it may take 70 minutes to bake or a bit longer.
  2. You can toss the strawberries with a little bit of flour, before adding them to the batter.
