Simple & Easy Yellow Rice

A simple and easy Yellow Rice dish, that is the perfect side dish to any meal.

This is my sister and I favorite type of rice.

So I am pretty sure we are not the only ones who loves it.

The taste and color of the rice is just beautiful.

My Yellow Rice Recipe is one of those rice that you can eat all by itself, because of all the flavors and herbs in it.

Yes, I was guilty of buying store bought version before and there is nothing wrong with that.

But the very moment I discovered how to make my very own Yellow Rice, I quit buying them.

When you know exactly what you are eating in your food, your body will smile and thank you.

The aroma that it gives off while it is cooking is so divine.

The combination of all the spices, herbs and flavors makes you don’t want to never go back to store bought yellow rice, when you can make your very own.

What is Yellow Rice?

Yellow Rice is a popular yellow colored rice that is preferred by the Indians, Spanish, as well as those living in the Caribbean.

It is often made by mixing long grain white rice or brown rice with some turmeric to give it that yellow color.

Another recipe that I have used turmeric powder in is my Jamaican Beef Patty and if you want even more you can also make this Jamaican Coco Bread to go with it too.

Add-In Options

There are a lot of add-ins that you can add to this Yellow rice recipe to make it your own.

Some of the options are:

  • Carrots, finely chopped
  • Tomatoes, diced
  • Bell Peppers (any color), diced
  • Sweet Corns
  • Sweet Peas
  • Even some raisins

How to make Yellow Rice?

Firstly, add the tumeric powder, curry powder and ground ginger to the heated oil and allow to burn for a while. Add the onions, garlic powder and green onions and saute.

Secondly, add the rice, salt, chicken stock and thyme and stir until well mixed in. Cover with a lid and let it boil for a few minutes.

Thirdly, add the frozen peas and sweet corn and mix well. Cover the pot and let it boil, until the water is absorbed.

Lastly, turn on low heat and allow to steam for about 20 minutes or until the rice is cook.

Ingredients

  • 2 cups long grain white rice or brown rice
  • 2 tsp turmeric powder
  • 1 tsp curry powder
  • 2 tsp garlic powder or 2 cloves garlic, diced
  • 1 small onion, diced
  • 2 scallion (green onion), chopped
  • 2 sprig thyme
  • 1/2 tsp ground ginger
  • 1 tsp salt
  • 3 cups chicken stock/broth
  • 2 Tbsp coconut oil or olive oil
  • 2 Tbsp butter
  • 1 roma tomato, diced (optional)
  • 1/2 cup green peas, frozen (optional)
  • 1/2 cup sweet corn, frozen (optional)

Instructions

  1. In a medium pot, add the coconut oil and butter and melt on medium heat. Pour the turmeric powder, ground ginger and curry powder to the heated oil. Then add the onions, garlic, tomatoes and green onion and saute for about 2 minutes.
  2. Add the rice and salt to the sauteed vegetables and mix, so that the rice will get a yellow coating. Then add the green peas, sweet corn and stir until well mixed in. Slowly stir in the chicken stock and then add the thyme on top and cover with a lid. Taste to make sure it has enough salt, before covering with a lid.
  3. Bring the mixture to a boil until all the water is absorb. Turn the heat on low and allow the rice to steam for about 15 to 20 minutes.
  4. Fluff with a fork, serve and enjoy.
