Moist and Easy Zucchini Bread

This Classic Zucchini Bread is super moist and easy to make, with a combination of spices that you will love.

At first, I was a little skeptical about Zucchini Bread when I first saw recipes and images of it.

I am not used to adding vegetables to my baking goods, except for my famous Carrot Cake.

Hey, who don’t love carrots, but zucchini.

Honestly, I rarely eat zucchini, much less to put it in a baked product. Come on now, vegetables in a bread.

I was a bit curious of the taste and how it would turn out.

But I wouldn’t know until I give it a try.

So, I decided to dive right in, with no looking back and see what the excitement was all about.

Give this Zucchini Bread a try

To my surprise, it was delicious.

My husband exact words were, “It don’t taste bad.”

My children wasn’t too curious about the green stuff in the bread.

All they did was ask for more.

So I just give them more.

After all, it’s a great way to disguised vegetables, so they can eat them.

The combination of the spices were awesome and tasted amazing in this Zucchini Bread recipe.

Plus, the zucchinis makes the bread so moist and there is absolutely no way you will taste it in the bread.

No taste of vegetables whatsoever.

Now you have to give this healthy zucchini bread recipe a try.

Well, it may not be as healthy as a zucchini bread keto style, but it is still healthy with the grated zucchinis.

Trust me, you wont regret it one bit.

What is Mixed Spice?

Mixed Spice is a combination of five different spices.

The spices are ground cinnamon, ground ginger, ground nutmeg, allspice and ground cloves.

This mixture of spices are often used by Jamaicans to bake cakes, banana breads, spice buns and other baking goods.

I used equal parts for each spice.

The smell of all the spices is so beautiful.

How To Prepare The Zucchini For Bread?

The best way to prepare the Zucchini is to grate it.

You should not chop or dice it.

Just use the good ole box grater to grate your Zucchini.

It may have some liquid afterwards, which is natural to happen.

However, if it is too much liquid, use a paper towel to absorb some of the liquid.

Should I Peel Off The Zucchini Skin?

No, there is no need to peel off the skin off the Zucchini.

You can add everything for this Zucchini Bread, including the skin.

After all, minerals and vitamins are found in the skin… so more nutrients for you.

How To Make Zucchini Bread?

This Zucchini Bread recipe may sound hard, but it is actually easy once you get the grated zucchinis out the way, you are almost there.

Plus, you won’t have to be beating sugar and butter like the other breads that I have on here.

This time I used vegetable oil.

Yep! Less work and way easier for us that are always in the kitchen cooking up something.

Put all your dry ingredients in a medium bowl and set aside for later.

Once you set aside the grated zucchinis in a bowl with a paper towel to absorb any extra liquid, whisk the eggs in a large bowl.

Add both the brown sugar and granulated sugar, vegetable oil, vanilla extract and continue to whisk.

Add the grated zucchinis to the wet ingredients and continue to stir with a spatula.

Now add the dry ingredients to the wet ingredients and mix well.

Mix in the grated Zucchini to the wet ingredients.

At this point, add in any Mix In to the batter and then pour the mixture into your prepared loaf pans.

Bake at 350 degree for 40 to 45 minutes.

Can I add in Mix-Ins?

Yes you can add any Mix-In of your choice.

As I stated above, I didn’t put any in this recipe.

However, you can go ahead and add your choice of mix ins to make it the way you like it.

Some of the Mix-Ins that you can add are:

  • Dried Cranberries
  • Chocolate Chips
  • Raisins
  • Any of your favorite chopped nuts.

How to store this Zucchini Bread?

You can store this Zucchini Bread on the counter top for 2 to 3 days tightly wrap in an airtight container.

For it to stay a little longer, store it in the refrigerator for up to 7 days in an airtight container.

Can I Freeze Zucchini Bread?

Oh Yes!

Just like any type of Banana Bread, you can freeze this Zucchini Bread too.

Please make sure the bread is cool completely and then wrap in layers with plastic wrap, before putting it in a freezer bag to freeze in the freezer.

You can freeze for up to 3 months.

Zucchini Bread Recipe

Ingredients

  • 2 cups Zucchini, grated
  • 1 Tbsp Vanilla Extract
  • 3/4 cup Vegetable or Canola Oil
  • 3 Large Eggs
  • 3/4 cup Brown Sugar
  • 3/4 cup Granulated Sugar
  • 2 cups All Purpose Flour, sifted
  • 1 tsp Salt
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 Tbsp Mixed Spice

Instructions

  1. Preheat oven to 350 degree F. Grease two 8 x 4 or 9 x 5 loaf pans and slightly dust with some flour or with some non-stick cooking spray.
  2. With a box grater, go ahead and grate the zucchini. The biggest one in the picture was just enough for 2 cups. Put a paper towel in a medium bowl and put the grated zucchini on top of it, to absorb any extra liquid.
  3. In a medium bowl, sift the flour, salt, baking powder, baking soda and mixed spice. Whisk together and set aside for later.
  4. In a large bowl, whisk the eggs. Add the vegetable oil, both brown and granulated sugar, vanilla extract and whisk together.
  5. Add the grated zucchinis to the wet ingredients.
  6. Pour the dry ingredients into the wet ingredients and mix well. Please Note: if you going to add any Mix-Ins, now is the time to do so.
  7. Pour the mixture into the prepared loaf pans and bake for about 45 to 60 minutes or until a toothpick or dinner knife is inserted in the center and it comes out clean.
  8. Once they are finished baking, allow to cool on a cooling rack before slicing. Enjoy.
