This Pumpkin Bread is a delicious blend of spices and flavor that is not just awesome in the fall, but throughout the year.

So yesterday the 23rd of September was the beginning of Fall, which means that my favorite time of the year (Christmas) is almost here.

Wait, where did the year go?

Three months for the year 2019 to finish.

But let’s focus on Fall for now with this Pumpkin Bread.

It is delicious because of all the spices and pumpkin flavor that are blended together to give you that Fall feeling.

Bread vs. Pie

I have never used Pumpkin to bake anything before.

As a Jamaican, pumpkin is only used in our soups on a Saturday or as a boiled food with some type of meat or fish.

Just never in anything baked but I was curious about using it to bake a bread.

With the help of my friends here, I was able to taste it in bread and a pie.

I prefer it as a bread and not so the pie.

The taste of Pumpkin in a pie just don’t sit well with me.

But with the pumpkin in the bread is more my style.

So I started to do some research and experiment, to come up with a pumpkin bread recipe that I would love.

Canned Pumpkin vs. Fresh Pumpkin

In my opinion, there are no specific rule to use canned or fresh product.

I think it’s all up to an individual.

However, if you are able to use fresh pumpkin in your recipe, then by all means go ahead and do so.

In this recipe, I used a 15oz canned pumpkin, but you can use fresh pumpkin if you choose to.

To use fresh pumpkin, you can either choose to bake/roast or boil the pumpkin first and then puree it in a food processor.

Then from there, you can start making your bread.

What is Mixed Spice?

Mixed Spice is a combination of five different spices.

These includes ground cinnamon, ground ginger, ground nutmeg, allspice and ground cloves.

This is a spice that Jamaicans used for baking cakes, banana breads and spice buns.

I used equal parts for each spice.

The smell of all the spices is so beautiful.

Can I freeze Pumpkin Bread?

Yes you can freeze this type of bread.

It can be frozen for up to 3 months.

Once it is cool after baking, wrap it up with enough plastic wrap and put it in a freezer bag.

Then place it in the freezer.

How to make Pumpkin Bread?

This Pumpkin is very easy to make.

In fact, it’s just like making the original Banana Bread, but instead of mashed bananas, Pumpkin puree is used.

Sift and combine all dry ingredients in a medium bowl and set aside for later.

In another medium bowl, beat the sugar and butter.

Then add the eggs one at a time and the vanilla extract.

Add the pumpkin puree to the wet ingredients and then add the dry ingredients to the wet ingredients.

Pour into a greased loaf pan and bake at 350 degrees Fahrenheit for about an hour or until it is baked.

Pumpkin Bread Recipe

Ingredients

  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 15 oz can Pumpkin Puree
  • 3/4 cup (1 1/2 sticks) butter, softened
  • 2 eggs
  • 1 3/4 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 Tablespoon Mixed Spice
  • 1/2 teaspoon salt
  • 1 Tablespoon vanilla extract
  • 1 cup chopped nuts (optional)

Directions

  1. Preheat oven to 350 degree F. Grease two 8 1/2 x 4 1/2 loaf pans and slightly dust with some flour or with some non-stick cooking spray.
  2. In a medium bowl, sift the flour, baking powder, baking soda, salt and mixed spice. Whisk together and set aside for later.
  3. Beat the two types of sugar and butter with a hand mixer in a separate large bowl. Add the vanilla extract and one egg at a time and mix together.
  4. Then add the pumpkin puree and mix well.
  5. Add the dry ingredients to the wet ingredients and combine together. Fold in 1/2 cup chopped nuts at this point with a spatula. Pour into the greased loaf pan. Then sprinkle the remainder of the chopped nuts on top of both batter.
  6. Bake for about an hour or until a toothpick or dinner knife is inserted in the center and it comes out clean.
  7. Once it’s finished baking, allow to cool on a cooling rack before slicing. Enjoy.
