Mango Lemonade

Mango Lemonade

Mango Lemonade is a refreshing and tropical Summer Drink that is packed with antioxidant and Vitamin C.

It is a simple beverage to make, with just only 4 ingredients: mango, granulated sugar, lemon juice and water.

With the perfect amount of sweetness, the sourness from the lemons and the the tasty and tropical flavor from the mangoes, this is all the Summer in a glass.

My childhood Summer days were mangoes and nothing but mangoes.

There were mangoes all around… in your yard and your neighbors too.

The best part was waiting until the rain stop falling and then go pick up mangoes that fell off the tree.

It was a competition between me and one of my favorite cousin… who would be the first under the tree to get all the mangoes… great memories.

Now that is is Summer, my husband has been bringing home mangoes for the past few week for us.

This Summer is different from the last one, since we can move around and interact more with each other.

I don’t often buy mangoes from the supermarket because it is a hit and miss for us.

This minute you can get one good mango from the amount you bought and then they are all in the garbage.

As a Jamaican, I love to get my mangoes directly from the tree, to eat or to juice.

So with all the beautiful mangoes sitting on my counter, I decided to make some Mango Lemonade Drink for the us before they are all gone.

How to cut a Mango

  1. With a sharp knife (please be careful), cut the mango length wise on a cutting board. From the the top of the mango (where the stem is) to all the way down, cutting along the sides of the pit.
  2. Repeat for the other side. In all you should have 3 pieces: 2 halves (cheeks) and the middle (the pit).
  3. Make length wise and cross wise cuts in each halves. Make sure not to cut through the skin.
  4. Push against the side that has the skin so that the flesh parts are pushing out.
  5. Scoop the mango flesh with a spoon or use a paring knife to remove the flesh.
  6. With the same knife remove any remaining flesh from around the pit.

Mango Lemonade Recipe

Ingredients

  • 3 large Mangoes, peeled and cubed to make 3 cups of mango puree
  • 3/4 cups Lemon Juice
  • 1 cup Granulated Sugar
  • 4 cups Water

Instructions

  1. Add the mango cubes to a blender or do it in two parts in a food processor. Pulse until smooth.
  2. Strain the mango puree through a fine mesh strainer into a large measuring cup to get 3 cups.
  3. Add the lemon juice and granulated sugar in a large pitcher. Stir well until the sugar is dissolved.
  4. Pour the mango puree and water. Stir together. Add more water is the consistency is too thick for you.
  5. Pour over some ice cubes in a glass, if you are in a hurry.
  6. Store in the refrigerator to chill, until ready to serve. When you are ready to serve, give it a stir before pouring it in the glass.

Notes:

  1. Use a fine mesh strainer to strain the mango puree.
  2. Add more water if the consistency is too thick for you. But keep in mind that when you add ice cubes and it melts, it adds water to it. So that’s why I like the consistency to it.
  3. Make sure to give the drink a stir before serving it, after it has been chilling in the refrigerator.
  4. To make it an adult cocktail, add your favorite rum to it.
